Now that I've settled into my new schedule and have adjusted to a later dinner, Mary and I have been cooking some more involved meals. For the past couple months we've been having veggie burgers and salad mix or something else quick so it has been a nice change. What have we had so far this week?
Sunday
- ginger soy seared ahi tuna
- grilled romaine hearts
- yellow pound cake with banana walnut rum sauce
Monday
- maple glazed salmon
- brown rice with scallion, honey, and lemon
Tuesday
- garlic naan
- white bean and spinach salad with citrus champagne vinaigrette
I've run out of ingredients so tonight is an incredibly complex meal of pasta with jarred spaghetti sauce...although I do have some basil in the garden that I can use.
